This BBQ meat recipe is perfect for grilling season, combining your favourite meat with the vibrant and nutritious Lotus Veggie Mix. The smoky flavours from the grill pair wonderfully with the tender, seasoned meat and the hearty, rehydrated veggies, making for a well-rounded, delicious meal.



Ingredients


  • 500g of your choice of meat (steaks, chicken breasts, sausages, or lamb chops)

  • 1 cup Lotus Veggie Mix

  • 2 tbsp olive oil

  • 2 tbsp soy sauce or balsamic vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp garlic powder

  • 1 tsp ground cumin

  • 1/2 tsp Lotus Nature’s Seasoning

  • Salt and pepper to taste

  • Fresh lemon wedges (optional, for serving)

  • Fresh herbs (optional, for garnish)


Instructions


  1. Prepare the Lotus Veggie Mix

    • Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.


  2. Marinate the Meat

    • In a bowl, combine olive oil, soy sauce (or balsamic vinegar), honey (or maple syrup), garlic powder, cumin, Lotus Nature’s Seasoning, salt, and pepper.

    • Coat the meat with the marinade and let it sit for at least 20 minutes (or up to 2 hours for more flavour).


  3. Prepare the Grill

    • Preheat your BBQ grill to medium-high heat.


  4. Grill the Meat

    • Grill the marinated meat on both sides until fully cooked to your desired level of doneness (about 4-5 minutes per side for chicken or sausages, 6-8 minutes per side for steaks, or as needed for lamb).

    • If grilling larger cuts, you can use a meat thermometer to check that it’s cooked through (e.g., 75°C/165°F for chicken).


  5. Grill the Veggies

    • While the meat is grilling, toss the rehydrated Lotus Veggie Mix with a little olive oil, salt, and pepper.

    • Place the veggies in a grill basket or wrap them in foil and grill for 8-10 minutes, turning occasionally, until they are tender and slightly charred.


  6. Serve

    • Once the meat is cooked and rested, serve alongside the grilled veggies. Garnish with fresh lemon wedges and herbs for extra flavour.


Tips!


  • For extra flavour, try adding your favourite BBQ sauce to the meat during the last few minutes of grilling.

  • Pair with a fresh salad or grilled corn on the cob for a complete BBQ meal.

  • Make the veggies spicy by adding chilli flakes or your favourite hot sauce to the mix before grilling.
