Coconut & Lime Chia Pudding

Ingredients

  • 400ml Global Organics Coconut Milk (or Coconut Cream for extra richness)

  • 3 tbsp chia seeds

  • 1 tbsp maple syrup or honey

  • 1 tsp fresh lime zest

  • Juice of ½ lime

  • 1 pinch Lotus Sea Salt

  • Fresh mango, passionfruit, or berries, to serve 


Method

In a mixing bowl, combine the coconut milk, chia seeds, maple syrup, lime zest, lime juice, and a small pinch of sea salt. Stir well and allow to sit for 10 minutes, stirring occasionally to prevent clumps. Cover and refrigerate for at least 2 hours, or overnight, until thickened. To serve, spoon into glasses or bowls, top with seasonal fruits, and garnish with extra lime zest for a refreshing spring treat.


Serves: 2–3
