Garden Fresh Roasted Peppers

A simple yet elegant dish that captures the freshness of the garden — roasted peppers, gently peeled and dressed with three classic flavours: olive oil, balsamic vinegar, and sea salt. Perfect as a light entertaining entrée, antipasto, or as a colourful addition to your meals.


Ingredients

  • 4 large red bell peppers (capsicums)

  • 2 tbsp Global Organics Extra Virgin Olive Oil

  • 1 tbsp Global Organics Balsamic Vinegar

  • 1 tsp sea salt flakes (to taste)


Method

Roast the peppers under a hot grill or over an open flame until the skins are charred and blistered. Place them in a bowl and cover to steam for 10 minutes — this makes peeling easier. Once cooled slightly, gently peel away the skins and remove seeds. Slice the peppers into wide strips and arrange on a serving plate. Drizzle generously with olive oil and balsamic vinegar, then sprinkle with sea salt flakes. Serve warm or chilled as an antipasto, entrée, or a flavourful side to your favourite dishes.
