Ingredients
1 can (400g) chickpeas, drained and rinsed
2 tbsp tahini
1 tbsp lemon juice
1 clove garlic
1/4 cup olive oil
1 tsp Lotus Veggie Mix (rehydrated)
Salt and pepper to taste
Water (to thin)
Instructions
Rehydrate the Lotus Veggie Mix in warm water for 10 minutes and drain.
In a food processor, combine chickpeas, tahini, lemon juice, garlic, and olive oil.
Add the rehydrated Lotus Veggie Mix and process until smooth.
If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency.
