Cold Veggie Pasta Salad

This Veggie Pasta Salad is a delicious, refreshing dish packed with colourful veggies and a light, zesty dressing. Perfect for a quick lunch, side dish, or picnic, it’s easy to make and full of vibrant flavours.



Ingredients


  • 1/2 cup Lotus Dried Vegetable Mix

  • 8 oz pasta (fusilli or rotini)

  • 1/4 cup black olives, slices

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup capsicum. diced

  • 1 tbsp olive oil

  • 1 tbsp red wine vinegar or lemon juice

  • 1 tsp Lotus Nature’s Seasoning

  • Fresh basil or oregano for garnish



Instructions


  1. Soak the Lotus Veggie Mix:

    • Soak the Lotus Veggie Mix in warm water for 10 minutes.

    • Drain and let it cool.


  2. Cook the Pasta:

    • Cook the pasta according to the package directions.

    • Drain and let it cool.


  3. Prepare the Salad:

    • In a large bowl, combine the cooked pasta, rehydrated Lotus Veggie Mix, olives, tomatoes, and capsicum.


  4. Make the Dressing:

    • In a small bowl, whisk together olive oil, vinegar or lemon juice, and Lotus Nature’s Seasoning.


  5. Assemble the Salad:

    • Pour the dressing over the pasta salad and toss everything to coat evenly.


  6. Serve:

    • Garnish with fresh herbs if desired and serve chilled.



Tips!


  • Add cheese like feta or parmesan for extra flavour.

  • Customise with other veggies like cucumber, spinach, or red onion.

  • This salad can be made ahead and stored in the fridge for a few hours.
