Cold Veggie Pasta Salad

This Veggie Pasta Salad is a delicious, refreshing dish packed with colourful veggies and a light, zesty dressing. Perfect for a quick lunch, side dish, or picnic, it’s easy to make and full of vibrant flavours.

Ingredients
1/2 cup Lotus Dried Vegetable Mix
8 oz pasta (fusilli or rotini)
1/4 cup black olives, slices
1/4 cup cherry tomatoes, halved
1/4 cup capsicum. diced
1 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
1 tsp Lotus Nature’s Seasoning
Fresh basil or oregano for garnish
Instructions
Soak the Lotus Veggie Mix:
Soak the Lotus Veggie Mix in warm water for 10 minutes.
Drain and let it cool.
Cook the Pasta:
Cook the pasta according to the package directions.
Drain and let it cool.
Prepare the Salad:
In a large bowl, combine the cooked pasta, rehydrated Lotus Veggie Mix, olives, tomatoes, and capsicum.
Make the Dressing:
In a small bowl, whisk together olive oil, vinegar or lemon juice, and Lotus Nature’s Seasoning.
Assemble the Salad:
Pour the dressing over the pasta salad and toss everything to coat evenly.
Serve:
Garnish with fresh herbs if desired and serve chilled.
Tips!
Add cheese like feta or parmesan for extra flavour.
Customise with other veggies like cucumber, spinach, or red onion.
This salad can be made ahead and stored in the fridge for a few hours.
