These homemade salad dressings are simple to prepare and packed with flavour, making them the perfect complement to any salad or grain bowl. With the addition of Lotus Veggie Mix, these dressings offer a unique twist that adds extra depth to your meals, turning every salad into a vibrant, nourishing dish.

1. Herb Vinaigrette
A light, herby vinaigrette that adds an earthy depth from the Lotus Veggie Range.
Ingredients
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Lotus Veggie Mix (rehydrated)
1 tsp Dijon mustard

Instructions
Rehydrate the Lotus Veggie Mix in warm water for 10 minutes, then drain.

Instructions
Soak the cashews for 2 hours, then drain.
