Cool Veggie Wraps

These Cool Veggie Wraps are a light, fresh, and nutritious option for a quick meal or snack. Packed with rehydrated Lotus Veggie Mix, creamy hummus or yogurt, and crisp vegetables, they offer a burst of flavour in every bite. Perfect for a healthy lunch or a refreshing bite on a warm day!



Ingredients


  • 1/2 cup Lotus Dried Vegetable Mix

  • 4 large lettuce leaves or tortilla wraps

  • 1/2 cup shredded carrots

  • 1/2 avocado, sliced

  • 1/4 cucumber, sliced

  • 1 tbsp hummus or Greek yogurt (optional)

  • 1 tsp Lotus Nature’s Seasoning



Instructions


  1. Rehydrate the Lotus Veggie Mix:

    • Place the Lotus Veggie Mix in a bowl and cover with warm water.

    • Let it sit for 10 minutes to rehydrate.

    • Drain the water and let the veggies cool.

  2. Prepare the Wraps:

    • Lay out lettuce leaves or wraps on a flat surface.


  3. Add a Spread:

    • Spread a thin layer of hummus or yogurt on each leaf or wrap.


  4. Layer the Veggies:

    • Add the cooled Lotus Veggie Mix, shredded carrots, sliced avocado, and cucumber.


  5. Season:

    • Sprinkle with Lotus Nature’s Seasoning or your preferred seasoning.


  6. Wrap and Secure:

    • Carefully wrap the lettuce or wrap tightly.

    • Use a toothpick to secure if needed.


  7. Serve:

    • Enjoy the fresh, vibrant wraps right away!



Tips!


  • For extra protein, add some chickpeas or grilled chicken.

  • Try adding fresh herbs or sprouts for more flavour.

  • These wraps are great for meal prep and can be stored in the fridge for a few hours before serving.
