Herb-Roasted Potatoes

Crispy on the outside and tender on the inside, these Herb-Roasted Potatoes are elevated with the flavours of Lotus Veggie Mix. Perfect as a side dish or snack, they’re a simple yet delicious way to enjoy hearty, plant-based goodness.

Ingredients
500g baby or diced potatoes
1/2 cup Lotus Veggie Mix
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary or thyme
1/2 tsp Lotus Nature’s Seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat the Oven:
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
Rehydrate the Lotus Veggie Mix:
Soak Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.
Prepare the Potatoes:
In a large bowl, toss the potatoes with olive oil, garlic powder, rosemary, Lotus Nature’s Seasoning, salt, and pepper.
Add the Veggie Mix:
Stir in the rehydrated Lotus Veggie Mix to coat evenly with the seasonings.
Roast the Potatoes:
Spread the potatoes and veggie mix evenly on the prepared baking tray.
Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy.
Serve:
Garnish with fresh parsley if desired and serve hot.
Tips!
For extra protein, add some chickpeas or grilled chicken.
Try adding fresh herbs or sprouts for more flavour.
These wraps are great for meal prep and can be stored in the fridge for a few hours before serving.
