A fresh, vibrant, and nutrient-packed salad, perfect for warm days. This recipe combines protein-rich quinoa with rehydrated Lotus Veggie Mix and a variety of crunchy vegetables, all tossed in a light and zesty dressing. It’s a wholesome dish that’s easy to make and perfect for lunch or as a side at your next gathering.

Ingredients
1 cup quinoa
1 cup Lotus Veggie Mix
1 avocado, sliced
1 cucumber, diced
1/2 cup shredded carrots
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey or maple syrup (optional)
Salt and pepper to taste
Fresh herbs for garnish (optional)
Instructions
Cook the Quinoa:
Rinse 1 cup of quinoa under cold water.
In a pot, combine quinoa with 2 cups of water, bring to a boil, then reduce to a simmer.
Cover and cook for 12-15 minutes until water is absorbed and quinoa is tender. Set aside to cool.
Rehydrate the Lotus Veggie Mix:
Place the Lotus Veggie Mix in a bowl and cover with warm water.
Let it sit for 10 minutes, then drain and set aside to cool.
Prepare the Vegetables:
While the quinoa and veggies are cooling, dice the cucumber, shred the carrots, and slice the avocado.
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, honey (if using), salt, and pepper.
Assemble the Salad:
In a large bowl, combine the cooked quinoa, rehydrated Lotus Veggie Mix, cucumber, shredded carrots, and avocado.
Drizzle with the dressing and toss gently to combine.
Serve:
Garnish with fresh herbs (optional) and enjoy immediately, or chill in the fridge for a refreshing meal later.
Tips!
Add your favourite protein, like grilled chicken or chickpeas, for an extra boost.
This salad can be made ahead and stored in the fridge for 1-2 days.
