This delicious roasted meat dish combines the rich flavours of your favourite protein with the nutritious and vibrant Lotus Veggie Mix. Roasted to perfection, the meat is paired with a medley of vegetables that bring out the natural sweetness and earthy taste, making it a comforting and well-rounded meal.

Ingredients
500g of your choice of meat (chicken, beef, or lamb)
1 cup Lotus Veggie Mix
2 tbsp olive oil or melted butter
3 garlic cloves, minced
1 tsp dried rosemary or thyme
1 tsp ground paprika
1/2 tsp Lotus Nature’s Seasoning
Salt and pepper to taste
1 cup vegetable broth (or more, if needed)
Fresh herbs (optional, for garnish)
Instructions
Preheat the Oven
Preheat your oven to 200°C (400°F).
Prepare the Lotus Veggie Mix
Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.
Season the Meat
Rub the meat with olive oil (or melted butter), minced garlic, rosemary or thyme, paprika, Lotus Nature’s Seasoning, salt, and pepper.
Roast the Meat
Place the seasoned meat on a roasting tray. Roast in the oven for about 25-30 minutes for chicken, or 1-1.5 hours for beef or lamb (depending on size), or until cooked through. Baste occasionally with vegetable broth to keep it moist.
Roast the Veggies
In the last 15-20 minutes of roasting, add the rehydrated Lotus Veggie Mix around the meat on the tray. Toss the veggies with a little olive oil, salt, and pepper, and roast until they are golden and tender.
Serve
Once the meat is fully cooked and rested, carve and serve with the roasted veggies. Garnish with fresh herbs if desired.
Tips!
For extra richness, add a squeeze of lime or a handful of spinach just before serving.
You can add chickpeas, lentils, or tofu for added protein.
Adjust the spices to your preference; add more curry powder for extra heat or sweetness.
