Veggie Curry

This comforting veggie curry, made with Lotus Veggie Mix, brings together rich, aromatic spices and hearty vegetables in a creamy coconut base. It’s a quick and easy plant-based dish that’s perfect for any night of the week, offering a satisfying, nutritious meal that’s bursting with flavour.



Ingredients


  • 1 cup Lotus Veggie Mix

  • 2 tbsp coconut oil or olive oil

  • 1 large onion, chopped

  • 2 garlic cloves, minced

  • 1-inch piece of fresh ginger, grated

  • 1 tbsp curry powder

  • 1 tsp ground turmeric

  • 1 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1 can (400g) coconut milk

  • 1 can (400g) diced tomatoes

  • 1 cup vegetable broth

  • 1/2 cup frozen peas or green beans

  • 1/2 tsp Lotus Nature’s Seasoning

  • Salt and pepper to taste

  • Fresh cilantro for garnish

  • Cooked rice or flatbread to serve



Instructions


  1. Rehydrate the Lotus Veggie Mix

    • Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.


  2. Sauté the Aromatics

    • Heat coconut oil in a large pot over medium heat.

    • Add the chopped onion and sauté until softened, about 5 minutes.

    • Stir in the garlic and grated ginger, cooking for another 2 minutes until fragrant.


  3. Add the Spices

    • Stir in curry powder, turmeric, cumin, and ground coriander. Cook for 1-2 minutes to toast the spices.


  4. Add the Liquids

    • Pour in the coconut milk, diced tomatoes, and vegetable broth. Stir well to combine.

    • Bring to a simmer and cook for 10 minutes to let the flavors develop.


  5. Add the Veggie Mix and Peas

    • Add the rehydrated Lotus Veggie Mix and frozen peas (or green beans). Stir to combine.

    • Simmer for an additional 10-15 minutes, until the veggies are tender and the curry has thickened.


  6. Season and Serve

    • Stir in Lotus Nature’s Seasoning and season with salt and pepper to taste.

    • Garnish with fresh cilantro and serve with rice or flatbread.



Tips!


  • For extra richness, add a squeeze of lime or a handful of spinach just before serving.

  • You can add chickpeas, lentils, or tofu for added protein.

  • Adjust the spices to your preference; add more curry powder for extra heat or sweetness.
