Elevate your fried rice game with this quick and easy recipe featuring Lotus Veggie Mix. Packed with vibrant veggies and savory flavours, it’s a delicious, wholesome meal perfect for any time of the day.

Ingredients
1 cup Lotus Veggie Mix
2 cups cooked and cooled rice (preferably day-old)
2 tbsp vegetable oil
2 garlic cloves, minced
1 small onion, diced
1/2 cup frozen peas or corn (optional)
2 eggs, lightly beaten (optional for non-vegan)
3 tbsp soy sauce (or tamari for gluten-free)
1 tsp sesame oil
1/2 tsp Lotus Nature’s Seasoning
2 green onions, sliced, for garnish
Instructions
Rehydrate the Lotus Veggie Mix:
Soak Lotus Veggie Mix in warm water for 10 minutes.
Drain and set aside.
Prepare the Base:
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
If using eggs, scramble them until cooked and set aside.
Cook the Veggies:
Add the remaining oil to the skillet.
Sauté garlic and onion until fragrant, about 2 minutes.
Stir in the rehydrated Lotus Veggie Mix and peas or corn, cooking for 3-4 minutes.
Add the Rice:
Increase the heat and add the cooked rice to the skillet.
Stir-fry for 2-3 minutes, breaking up any clumps.
Season the Rice:
Add soy sauce, sesame oil, and Lotus Nature’s Seasoning.
Mix well to coat the rice evenly.
Combine and Finish:
If using scrambled eggs, stir them back into the rice.
Cook for an additional 1-2 minutes, ensuring everything is heated through.
Serve:
Garnish with sliced green onions and serve hot.
Tips!
For extra protein, add some chickpeas or grilled chicken.
Try adding fresh herbs or sprouts for more flavour.
These wraps are great for meal prep and can be stored in the fridge for a few hours before serving.
