Veggie Fried Rice

Elevate your fried rice game with this quick and easy recipe featuring Lotus Veggie Mix. Packed with vibrant veggies and savory flavours, it’s a delicious, wholesome meal perfect for any time of the day.



Ingredients


  • 1 cup Lotus Veggie Mix

  • 2 cups cooked and cooled rice (preferably day-old)

  • 2 tbsp vegetable oil

  • 2 garlic cloves, minced

  • 1 small onion, diced

  • 1/2 cup frozen peas or corn (optional)

  • 2 eggs, lightly beaten (optional for non-vegan)

  • 3 tbsp soy sauce (or tamari for gluten-free)

  • 1 tsp sesame oil

  • 1/2 tsp Lotus Nature’s Seasoning

  • 2 green onions, sliced, for garnish



Instructions


  1. Rehydrate the Lotus Veggie Mix:

    • Soak Lotus Veggie Mix in warm water for 10 minutes.

    • Drain and set aside.


  2. Prepare the Base:

    • Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.

    • If using eggs, scramble them until cooked and set aside.


  3. Cook the Veggies:

    • Add the remaining oil to the skillet.

    • Sauté garlic and onion until fragrant, about 2 minutes.

    • Stir in the rehydrated Lotus Veggie Mix and peas or corn, cooking for 3-4 minutes.


  4. Add the Rice:

    • Increase the heat and add the cooked rice to the skillet.

    • Stir-fry for 2-3 minutes, breaking up any clumps.


  5. Season the Rice:

    • Add soy sauce, sesame oil, and Lotus Nature’s Seasoning.

    • Mix well to coat the rice evenly.


  6. Combine and Finish:

    • If using scrambled eggs, stir them back into the rice.

    • Cook for an additional 1-2 minutes, ensuring everything is heated through.


  7. Serve:

    • Garnish with sliced green onions and serve hot.



Tips!


  • For extra protein, add some chickpeas or grilled chicken.

  • Try adding fresh herbs or sprouts for more flavour.

  • These wraps are great for meal prep and can be stored in the fridge for a few hours before serving.
