Veggie-Loaded Soup

This comforting and nourishing soup, made with Lotus Veggie Mix, is packed with flavour and nutrition. It’s the perfect dish for any season, offering a rich, savoury broth filled with tender veggies and hearty grains that make it a satisfying meal on its own.



Ingredients


  • 1 cup Lotus Veggie Mix

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 1 can (400g) diced tomatoes

  • 4 cups vegetable broth (or chicken broth)

  • 1 tsp dried thyme

  • 1 tsp dried basil

  • 1/2 tsp Lotus Nature’s Seasoning

  • Salt and pepper to taste

  • Fresh parsley for garnish



Instructions


  1. Prepare the Lotus Veggie Mix

    • Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.


  2. Sauté the Aromatics

    • Heat olive oil in a large pot over medium heat.

    • Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften.


  3. Add the Broth and Tomatoes

    • Stir in the diced tomatoes and vegetable broth.

    • Bring the soup to a simmer and cook for 10 minutes to let the flavours develop.


  4. Add the Veggie Mix

    • Add the rehydrated Lotus Veggie Mix to the soup along with dried thyme, basil, and Lotus Nature’s Seasoning. Stir well.

    • Simmer for an additional 15-20 minutes, until the veggies are tender and the flavors meld together.


  5. Season and Serve

    • Season the soup with salt and pepper to taste.

    • Ladle the soup into bowls and garnish with fresh parsley.



Tips!


  • For a heartier soup, add cooked beans, lentils, or pasta.

  • You can add a splash of lemon juice or a drizzle of cream for extra flavour.

  • Make it spicy by adding chilli flakes or hot sauce.
