Veggie-Loaded Soup

This comforting and nourishing soup, made with Lotus Veggie Mix, is packed with flavour and nutrition. It’s the perfect dish for any season, offering a rich, savoury broth filled with tender veggies and hearty grains that make it a satisfying meal on its own.

Ingredients
1 cup Lotus Veggie Mix
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 can (400g) diced tomatoes
4 cups vegetable broth (or chicken broth)
1 tsp dried thyme
1 tsp dried basil
1/2 tsp Lotus Nature’s Seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Prepare the Lotus Veggie Mix
Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.
Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften.
Add the Broth and Tomatoes
Stir in the diced tomatoes and vegetable broth.
Bring the soup to a simmer and cook for 10 minutes to let the flavours develop.
Add the Veggie Mix
Add the rehydrated Lotus Veggie Mix to the soup along with dried thyme, basil, and Lotus Nature’s Seasoning. Stir well.
Simmer for an additional 15-20 minutes, until the veggies are tender and the flavors meld together.
Season and Serve
Season the soup with salt and pepper to taste.
Ladle the soup into bowls and garnish with fresh parsley.
Tips!
For a heartier soup, add cooked beans, lentils, or pasta.
You can add a splash of lemon juice or a drizzle of cream for extra flavour.
Make it spicy by adding chilli flakes or hot sauce.
