Veggie Stew

This flavourful and comforting veggie stew, made with Lotus Veggie Mix, is a perfect dish for chilly nights. It’s packed with nutritious ingredients, hearty flavours, and a satisfying texture, making it the ideal plant-based meal for the whole family.

Ingredients
1 cup Lotus Veggie Mix
2 tbsp olive oil
1 large onion, chopped
2 garlic cloves, minced
2 carrots, sliced
2 potatoes, diced
1 celery stalk, chopped
1 can (400g) diced tomatoes
4 cups vegetable broth
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
1/2 tsp Lotus Nature’s Seasoning
Salt and pepper to taste
1 cup spinach or kale, chopped (optional)
Fresh parsley for garnish (optional)
Instructions
Rehydrate the Lotus Veggie Mix
Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.
Sauté the Vegetables
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cooking until softened, about 3 minutes.
Stir in carrots, potatoes, and celery, and cook for another 5 minutes.
Add the Liquid and Seasonings
Add the diced tomatoes, vegetable broth, dried thyme, rosemary, bay leaf, and Lotus Nature’s Seasoning.
Stir well to combine and bring to a boil.
Simmer the Stew
Reduce the heat to low and let the stew simmer for 25-30 minutes, or until the vegetables are tender.
Add the Lotus Veggie Mix
Stir in the rehydrated Lotus Veggie Mix and simmer for an additional 5-7 minutes.
Finish the Stew
If using, add the spinach or kale and stir until wilted.
Season with salt and pepper to taste.
Serve
Remove the bay leaf, garnish with fresh parsley, and serve warm.
Tips!
Add beans or lentils for extra protein.
Serve with crusty bread for dipping.
Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
