Veggie Stew

This flavourful and comforting veggie stew, made with Lotus Veggie Mix, is a perfect dish for chilly nights. It’s packed with nutritious ingredients, hearty flavours, and a satisfying texture, making it the ideal plant-based meal for the whole family.



Ingredients


  • 1 cup Lotus Veggie Mix

  • 2 tbsp olive oil

  • 1 large onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 2 potatoes, diced

  • 1 celery stalk, chopped

  • 1 can (400g) diced tomatoes

  • 4 cups vegetable broth

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • 1/2 tsp Lotus Nature’s Seasoning

  • Salt and pepper to taste

  • 1 cup spinach or kale, chopped (optional)

  • Fresh parsley for garnish (optional)



Instructions


  1. Rehydrate the Lotus Veggie Mix

    • Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.


  2. Sauté the Vegetables

    • Heat olive oil in a large pot over medium heat.

    • Add onion and garlic, cooking until softened, about 3 minutes.

    • Stir in carrots, potatoes, and celery, and cook for another 5 minutes.


  3. Add the Liquid and Seasonings

    • Add the diced tomatoes, vegetable broth, dried thyme, rosemary, bay leaf, and Lotus Nature’s Seasoning.

    • Stir well to combine and bring to a boil.


  4. Simmer the Stew

    • Reduce the heat to low and let the stew simmer for 25-30 minutes, or until the vegetables are tender.


  5. Add the Lotus Veggie Mix

    • Stir in the rehydrated Lotus Veggie Mix and simmer for an additional 5-7 minutes.


  6. Finish the Stew

    • If using, add the spinach or kale and stir until wilted.

    • Season with salt and pepper to taste.


  7. Serve

    • Remove the bay leaf, garnish with fresh parsley, and serve warm.


Tips!


  • Add beans or lentils for extra protein.

  • Serve with crusty bread for dipping.

  • Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
