This vibrant Yogi Bowl is packed with nutritious ingredients, including the wholesome Lotus Veggie Mix, to give you a nourishing, plant-based meal that’s both filling and flavourful. Perfect for a quick lunch or dinner, this bowl is loaded with fresh veggies, protein, and healthy fats for a balanced and energising meal.

Ingredients
1 cup Lotus Veggie Mix
1/2 cup cooked quinoa or brown rice
1/2 avocado, sliced
1/4 cup chickpeas (cooked or canned, drained)
1/4 cup shredded carrots
1/4 cup cucumber, thinly sliced
2 tbsp hummus or tahini
1 tbsp olive oil
1 tsp lemon juice
Salt and pepper to taste
Fresh herbs (optional, for garnish)
Instructions
Prepare the Lotus Veggie Mix
Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.
Assemble the Bowl
In a bowl, layer the cooked quinoa or brown rice as the base.
Add the rehydrated Lotus Veggie Mix, avocado slices, chickpeas, shredded carrots, and cucumber on top.
Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the ingredients in the bowl.
Garnish and Serve
Add a dollop of hummus or tahini in the centre of the bowl and garnish with fresh herbs, if desired.
Tips!
Feel free to add other toppings like seeds, nuts, or pickled vegetables for extra crunch and flavour.
You can also switch the quinoa or rice for your favourite grain like farro or couscous.
For added protein, include a boiled egg or grilled tofu.
