This vibrant Yogi Bowl is packed with nutritious ingredients, including the wholesome Lotus Veggie Mix, to give you a nourishing, plant-based meal that’s both filling and flavourful. Perfect for a quick lunch or dinner, this bowl is loaded with fresh veggies, protein, and healthy fats for a balanced and energising meal.



Ingredients


  • 1 cup Lotus Veggie Mix

  • 1/2 cup cooked quinoa or brown rice

  • 1/2 avocado, sliced

  • 1/4 cup chickpeas (cooked or canned, drained)

  • 1/4 cup shredded carrots

  • 1/4 cup cucumber, thinly sliced

  • 2 tbsp hummus or tahini

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Salt and pepper to taste

  • Fresh herbs (optional, for garnish)



Instructions


  1. Prepare the Lotus Veggie Mix

    • Soak the Lotus Veggie Mix in warm water for 10 minutes. Drain and set aside.


  2. Assemble the Bowl

    • In a bowl, layer the cooked quinoa or brown rice as the base.

    • Add the rehydrated Lotus Veggie Mix, avocado slices, chickpeas, shredded carrots, and cucumber on top.


  3. Make the Dressing

    • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the ingredients in the bowl.


  4. Garnish and Serve

    • Add a dollop of hummus or tahini in the centre of the bowl and garnish with fresh herbs, if desired.



Tips!


  • Feel free to add other toppings like seeds, nuts, or pickled vegetables for extra crunch and flavour.

  • You can also switch the quinoa or rice for your favourite grain like farro or couscous.

  • For added protein, include a boiled egg or grilled tofu.
